In a 9" non-stick sprayed pan placed on medium heat-
Cut up about 1 cup of any meat-ham, sausage, cut up bacon
3/4 cup any cut small potato
Any other vegetables, we use cut up or sliced mushrooms, zucchini, onion, pepper, asparagus about 1/2 cup each
Fry until soft- add a small amount of olive oil if needed.
Wisk 5 eggs with 1 teas. Creole seasoning, 1 teas. Hidden Valley Ranch powder, 1 teas. mustard, salt and pepper according to taste
Pour over veggie/meat mixture and cover
When eggs are set, lift with spatula and place tomato slices between mixture and pan. Heat a few more minutes.
Place a microwave safe serving dish inverted over skillet. Flip the meat, veggie, tomato mixture so that the tomato is on the top.
Sprinkle with about 1/2 cup mozzarella cheese. Zap in the microwave till cheese melts and the eggs are all cooked. Can garnish with fresh basil from your garden.
Cut in pie shaped wedges to serve. Serves 5-7
